Penfolds 'Bin 389' Cabernet Shiraz 2007 - 750mL

Overview: Penfolds 'Bin 389' is often referred to as "Baby Grange," due to its composition being matured in the same barrels that held the previous vintage of Grange. This 2007 vintage beautifully combines the structure of Cabernet Sauvignon with the richness of Shiraz, embodying the artful Penfolds blending spirit.

Tasting Notes: The 2007 'Bin 389' boasts a robust structure with a bouquet of dark fruits and spicy oak aromas. The palate is richly layered with flavors of blackcurrant, plum, and hints of peppery spice, balanced by fine tannins and a subtle oak finish.

Vinification: Crafted with grapes sourced from premium vineyards across South Australia, including Barossa Valley and McLaren Vale. This wine undergoes fermentation in wooden and stainless steel vats, followed by maturation in American oak barrels previously used for Grange.

Ratings and Reviews:

  • Robert Parker - Wine Advocate: 92 points - "A robust blend that showcases complexity and depth, ideal for aging."
  • Wine Spectator: 90 points - "Vibrant and expressive, this wine offers a harmonious mix of fruit and spice, with a lingering finish."
  • James Halliday: 94 points - "Densely packed and beautifully balanced, this is a stellar vintage for Bin 389.  Strong colour; has the strength of all the '07 Penfolds' reds, with an array of black fruits, dark chocolate and vanilla/mocha; the tannin structure is particularly good for the vintage."

Perfect Pairings: This wine pairs splendidly with rich meat dishes such as roasted lamb, beef brisket, or hearty stews. It's also a great match for aged cheeses and dark chocolate.

Collector's Note: The 2007 vintage is praised for its cellar potential. Currently showing splendid maturity, it promises to develop further complexity with additional aging.
