Description: Elevate your wine collection with the prestigious 2007 Penfolds 'Bin 707' Cabernet Sauvignon. This iconic Australian wine, presented in a generous 1500mL bottle, is a masterpiece from the renowned Penfolds winery, known for its commitment to quality and excellence. The 2007 vintage is particularly noted for its structure and depth, offering a sophisticated experience for the discerning palate.

Bin 707 is Penfolds' Cabernet Sauvignon version of Grange: ripe, intensely-flavoured fruit; completing fermentation and maturation in new oak; fully expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing.

Named by an ex-Qantas marketer, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000 or 2003 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 has a secure place among the ranks of Australia's finest Cabernets.

"Twenty vintages after winning the inaugural Adelaide Trophy with the 1987 Bin 707, this new 2007 Bin 707 release continues to demonstrate the advantage & wisdom of multi-regional blending in difficult years."
"Boldly Bin 707. Unmistakable!"
Peter Gago - Penfolds Chief Winemaker

Tasting Notes: The 2007 Penfolds 'Bin 707' displays a deep, rich garnet color with a bouquet of blackcurrant, tobacco, and a hint of mint, underpinned by a robust oak framework. On the palate, it reveals concentrated layers of dark fruits, mocha, and savory spices, coupled with firm tannins that promise longevity. This full-bodied wine culminates in a long, elegant finish, showcasing its exceptional craftsmanship and varietal integrity.

Vinification: Penfolds 'Bin 707' is purely made from Cabernet Sauvignon, sourced from the finest vineyards in South Australia. The wine undergoes fermentation in new American oak barrels to enhance its aromatic complexity and textural depth. The 2007 vintage was particularly challenging due to varying climatic conditions, making the harvest even more valuable.

Ratings and Reviews:

  • Robert Parker's Wine Advocate: 94 points - "A cabernet of great stature and quality, with a balance that assures aging potential. Complex and intricately layered with dark fruit and earthy nuances."
  • Wine Spectator: 92 points - "Robust and intense, with a depth that indicates its pedigree. Best from 2012 through 2025."
  • Huon Hooke - 93/100 Points - Deep red purple, excellent colour. Loads of mocha-like oak-infused characters on nose: chocolate, coffee and mocha. Dense, thick texture, layers of tannin but good tannins that saturate the entire palate. Very long. An idiosyncratic cabernet but profound, powerful, ageworthy, potentially excellent. Needs ages. Tasted: 21/07/2010

Cellaring Potential: With proper storage, this wine is structured to age gracefully, enhancing its complexity and flavor profile. It is anticipated to reach its peak maturity between 2020 and 2030, making it a splendid choice for collectors and connoisseurs.
