This bold Shiraz is a celebration of the depth and diversity of the Barossa Valley, one of Australia's premier wine regions, known for producing world-class Shiraz. Each 750 mL bottle is a testament to the meticulous care and passion that goes into creating a wine that is both powerful and elegant.
Tasting Notes: The 2021 Dero Shiraz exudes a complex bouquet of dark fruits like blackberries and plums, intricately woven with hints of chocolate, vanilla, and spicy oak. On the palate, it presents a robust structure with lush, velvety tannins that evolve into a long, satisfying finish. The interplay of fruit and oak is masterfully balanced, ensuring that each sip offers a harmonious blend of flavors.
Vinification: Sourced from the esteemed vineyards of Barossa Valley, the grapes for this Shiraz are handpicked to ensure optimal quality and character. The wine undergoes fermentation in state-of-the-art facilities followed by aging in French oak barrels to enhance its aromatic complexity and textural sophistication.
Food Pairing: This Shiraz pairs beautifully with rich, hearty dishes such as grilled meats, spicy barbecued ribs, or a gourmet mushroom burger. It also complements a cheese platter featuring aged cheddar or smoky gouda, making it a versatile choice for dining and entertaining.
Background:
The aim of the 2021 vintage was to source the best possible fruit we could. As fortune had it, an unrelated call prior to vintage to our now good mate Joel Mattschoss saw us doing some odd jobs around his amazing Wilton Hill property in a “work for fruit” type payment scenario.
As harvest was almost upon us, the good fortune continued with a call from a mate to say “I’m at a vineyard down the road from you, the owner is out of picking bins, and the pickers have gone home. Do you like Pinot?” The following day we descend on some wonderful organically grown Pinot Noir, and after a bit of massaging throughout the year Eden Valley stalwart Mark Barthlemeus let us pick a little of his gnarly old 1919 Shiraz.
Along with our now allocated plot from Adrian Hoffmann, our 2021 Dero consists of the following…
- A Barrique of 2020 Dero – After blending our 2020 wine we returned a blended Barrique to the cellar. This stood the test of time beautifully and is included in the 21 Blend.
- Ebenezer – Adrian Hoffmann – Mickan Block DV Shiraz.
- Eden Valley – Joel Mattschoss – Wilton Hill Old Vine & Block 14 Shiraz.
- Eden Valley – Mark Barthlemeus – Old Vine 1919 Shiraz.
- Eden Valley – Tony Walker – Marden Springs Pinot Noir.
The above fruit was all handpicked in 400 to 1500kg parcels ranging from 11.5-15 beaume. The largest parcel was broken down into three separate ferments with most going through long slow whole clusters fermentations – with a small parcel open fermented.
The wine was then filled to French Oak Barriques to rest in our cool cellar for around 16 months and blended towards the end of winter 2022, shortly after 2685 bottles were filled unfined and unfiltered with only a small so2 addition prior to bottling.

What do you need from me to get started?
We will need you to confirm that you are over 18 (for obvious reasons!) and to open an account by registering on the site. This will include provision of credit card details for any eventual purchases. You will also need to sign that you have read the terms and conditions.
How many wines are in each Lot?
You will see the quantity (number of bottles) stated above the price. Please note that the bid-price is per bottle so you will need to multiply the price by the number of bottles in the lot to calculate the total price of the lot.
Can I cancel my bid if I change my mind?
All bids are final - please think before you confirm your bid.
How much is the Buyers' Commission?
We have an extremely competitive buyers' commission of 16.5% (GST inclusive). This will be added to the final winning price of your Lot at the end of the auction.

Is there a Guarantee on my wine?
Under Australian law, consumer guarantees do not apply to goods purchased at auction - all such purchases are at the risk of the Buyer. We will always provide as much detail as we can as to the visual condition and provenance of each Lot, however this is done so as a guide rather than as a guarantee.
